These are two varieties of quick and easy mussel recipes. Try them as an appetizer with home baked french fries or fresh crusty bread.

Preparation time: approx. 10mins. Cook time: approx. 10 mins.
Scrub mussels with a brush in cold water to clean them and make sure they are all closed tightly. This means that they are alive.
White Wine Mussels
Sautee ½ cup of chopped up onion on low/med heat with 2 tablespoons of butter until onions are transparent.
Toss in the mussels and increase heat to med/high.
Stir mussels and cook for 1 min, then stir again.
Add ¾ cup of white wine, stir and cover for 2 mins.
Stir, and cover for approx 2 mins, or until all mussels have opened up.
Pepper to taste.
Coconut Thai Mussels
Sautee ½ cup of chopped up onion and tablespoon of Thai curry paste on med heat with 2 tablespoons of butter until onions are transparent.
Toss in the mussels and increase heat to med/high.
Stir mussels and cook for 1 min, then stir again.
Add 1 can of coconut milk (the type with at least 75% coconut milk vs water), stir and cover for 2 mins.
Stir, and cover for approx 3 mins, or until all mussels have opened up.
Pepper to taste.
